Penne Alla Arrabiata

Initial Planning

Dice the peppers and onions ahead of time and keep in a small bowl. Cut the tomatoes into small cubes (½ inch or so).


This sauce can be prepared in the time it takes the pasta to cook. Follow the instructions on the box or bag of penne. Once the water is boiling and you add the pasta, start making the sauce

Heat the olive oil in a frying pan and add the garlic, onion, and peppers. Cook for a minute or two and then add the tomatoes, parsley, crushed red pepper, basil, oregano, and salt. Simmer the sauce until the boiling penne is al dente and then drain the water from the penne and add the pasta to the pan of sauce (don't rinse it first). Cook for a few more minutes until the penne is done. Sprinkle with Parmesan cheese.

Serve with salad and garlic bread and a nice glass of Pinot Noir.
